Quick and Easy Barilla Pesto Cheesy Breadsticks

Simple and easy meal options are always a winner in my book. And these cheesy breadsticks made with Barilla Creamy Genovese Pesto have soon become a favorite in my household. I make them every time we have spaghetti or lasagna. Not only are they delicious, but they are super easy to make.

Barilla Creamy Genovese Pesto is imported from Italy, and made with Italian basil and freshly grated Italian cheese, and has a deliciously, creamy texture.

This pesto can be used in so many different ways. It is delicious stirred into pasta and grains, spread onto sandwiches and toast, marinated with meats and veggies, and as a dip for crackers and vegetables.

I decided to put a twist on our normal cheesy breadsticks by adding pesto. The pairing is absolutely perfect.

These breadsticks are great as a snack with marinara or homemade ranch dipping sauce, or paired with your favorite meal, like spaghetti or lasagna.

They can also be enjoyed solo. It’s like eating a cheese pizza in the form of breadsticks.

Did I mention how easy these are to make? This is a simple recipe that you can make with your kids. Here’s my easy recipe:


1 (13.8-oz) can refrigerated pizza crust
½ cup Barilla Creamy Genovese Pesto
1 tbsp olive oil
1 cup shredded cheddar and monterey jack cheese (or cheese of your choice)


Preheat oven to 350ºF.

Unroll pizza dough and press onto a cookie sheet.

Using a pizza cutter, cut dough lengthwise into 8 – 10 long strips. Next cut those strips in half to make roughly 16 – 20 strips. Do not separate strips.

Brush lightly with olive oil.

Bake for 10 minutes.

Remove breadsticks from the oven. Spread pesto on top of the partially baked breadsticks. Top with cheese.

Return breadsticks to the oven and bake for about 5 minutes, until bread is golden brown and cheese is melted.

Remove from oven and let cool slightly.

Pull apart and enjoy!

Turkey Taco Lettuce Wraps Recipe

These turkey taco lettuce wraps make an easy, low carb dinner that your family is sure to love!


As of late, I have been trying to choose healthier options when preparing meals for me and my family. One of the things that I have done, is to cut back on the amount of breads and carbs that we consume.

Mexican foods are a favorite around here. So now we can enjoy Taco Tuesdays without the guilt. This dish is a hit with my family, and I am sure you will enjoy it too.


Taco Filling

When it comes to taco fillings, the possibilities are endless! Here are the most basic options:

Veggies: Tomatoes, Red Onions, Corn
Fruits: Avocado, Jalapenos, Black Olives
Cheeses: Monterey Jack, Cheddar, Pepper Jack, Queso, Nacho
Extras: Sour Cream, Refried Beans, Black Beans,Black Olives, Guacamole, Salsa, Hot Sauce, Cilantro, Pinto Beans, Tortilla Strips, Pico De Gallo, Refried Beans


The leftover turkey mixture should be kept in an airtight container in the refrigerator, and consumed within three days.


Turkey Taco Lettuce Wraps



1 lb ground turkey
1 yellow or white onion chopped
2 cloves garlic
1 tbsp chili powder
1 tsp ground cumin
1/2 tsp paprika
1/2 cup tomato sauce
1/4 cup low-sodium chicken broth
Pinch of salt and pepper ( to taste )
Romaine lettuce leaves (or your choice of lettuce leaves)
Shredded Mexican style cheese, diced Roma tomatoes, diced red onion
*Diced avocado, chopped cilantro, sour cream, – optional


1. Heat 1 tbsp of olive oil in a non-stick pan over medium-high heat. Add onion and saute for 2 minutes.
2. Add turkey and garlic, season with salt and pepper, and cook thoroughly.
3. Add chili powder, cumin, paprika, tomato sauce and chicken broth.
4. Reduce to a simmer and cook about 5 minutes until sauce has reduced.
5. Serve mixture over lettuce leaves, and add desired toppings.


Honey Soy Chicken Thighs Recipe

This recipe for baked honey soy chicken thighs is super easy and has quickly become one of my family’s favorites. The deliciously sticky sauce is perfect for spooning over rice and vegetables.

Recipe Ingredients:

3 tbsp olive oil
¼ cup reduced sodium soy sauce
2 tsp worcestershire sauce
½ cup of honey
4 cloves of minced garlic
½ tsp onion powder
½ teaspoon ground ginger
8 – 10 chicken thighs (or your preferred cut of chicken) 


Red pepper flakes


Cooking Instructions:

1. Preheat oven to 425 degrees.

2. Wash chicken and pat dry with a paper towel.

3. In a large Ziploc bag, mix together all of your ingredients.

4. Add the chicken to the plastic bag. Make sure the bag is sealed securely, then gently toss to coat each piece. Then, place the bag in your refrigerator to marinate for 2 – 4 hours.

5. Add chicken and marinade to a cast iron skillet (my preferred method of cooking) or baking dish in a single layer.

6. Bake chicken in a 425 degree oven for about 35 minutes skin side up.
Turn on broil and let chicken broil until the skin is crispy (for about 5 – 7 minutes).

7. Lastly, garnish with red pepper flakes and parsley. Serve honey soy chicken thighs over vegetables, rice, or pasta.

Review: Once Again Organic Amore Almond Spread With Milk Chocolate

Sweet treats are a favorite in our household. I especially love any treat that involves chocolate. When Moms Meet gifted me this Once Again Organic Amore Almond Spread With Milk Chocolate, I was really excited.

I have to be honest and say that I can be a tad bit finicky when it comes to trying new foods. But I was not disappointed with this almond spread. It really satisfies my sweet tooth.

After trying it, I started trying to come up with different foods that I could drizzle it over. It turned out to be a big hit with my husband and son as well. I mean, this spread actually makes any dessert into a gourmet treat!

My Opinion

Once Again Organic Amore Almond Spread is an organic, non-gmo, and gluten-free treat that my family really enjoys. It is sustainably made and sourced, which makes it healthier than other dessert butters.

Being that I am a chocolate fiend, I couldn’t wait to try it. It has a nice chocolatey flavor that is not overly sweet. It adds an extra oomph to your favorite fruits.

My son and I dip our apples in this almond spread and my husband loves it on frozen bananas. It’s also great on toast for a nice midday snack or for dipping your strawberries in. I think my favorite though is having it drizzled over my ice cream. Yum!

Since receiving this product, I have found myself reaching for it almost every night (hey, don’t judge me). I try to incorporate healthier options into my family’s diet as often as possible so the fact that this spread is organic and gluten-free makes me happy.

Slow Cooker Pulled Pork Recipe

This slow cooker pulled pork is such an easy meal and so full of flavor. It’s the perfect meal for those summer months when you don’t want to be stuck in the kitchen standing over a hot stove. All you need is a few spices and some barbeque sauce and you are good to go.

You can serve the pulled pork on buns with coleslaw, or serve it alongside some baked beans, corn on the cob, coleslaw and garlic bread for a full meal.


Slow Cooker Pulled Pork Sandwich

8 to 10
10 minutes
8 hours to 10 hours



1 large onion, finely chopped
1 cup Barbeque Sauce
1 tbsp. Chili Powder
¼ cup Liquid Smoke
¼ cup Apple Cider Vinegar
1 tsp Onion Powder
2 tbsp Garlic Powder
1 tsp Mustard Powder
1 tsp Thyme
1/4 cup Brown Sugar
1 tbsp Paprika
1 tsp Black Pepper
1 Pork Shoulder (3 or 4 lbs trimmed of excess fat) 




1. Mix together all of the dry spices and rub into all sides of the pork.

2. Combine vinegar, onion, and liquid smoke and place in the bottom of your slow cooker.

3. Wash meat and pat dry. 

4. Carefully add the pork shoulder.

5. Pour barbeque sauce on top of the meat.

6. Cover and cook on low for about 8 hours. Meat should be tender and easy to pull apart.

7. Remove pork from slow cooker and transfer to a bowl.

8. Shred with two forks or a meat shredder and toss with juices from the slow cooker. Feel free to add a bit more barbeque sauce if desired. 



Refrigerate any leftovers (moistened with some of the cooked liquid) in an airtight container for up to 1 week.

You can also freeze the pork for up to 2 months. Defrost overnight in the refrigerator.

Twelve Healthy Snacks For When You Are On The Go

Choosing healthy snacks is not always easy when you are constantly on the go. That typically means that when we’re hit with the mid-day munchies, we head to the nearest vending machine for a quick snack that’s overloaded with fat, sugar, and salt.

It doesn’t have to be that way. With careful planning and a little bit of meal prepping, you can help ensure that you and your family maintain a well-balanced diet.

I like to package my family’s snacks in the little snack-sized Ziploc bags so that they can be easily grabbed and tossed into a lunch or tote bag for the day.

By storing snacks in individual servings in the fridge or pantry, it also ensures that we eat single servings, as opposed to eating an entire container (guilty party here).

Here are some of my family’s favorite snacks that are healthy and also easy to grab when on the go. Best of all, many of these items can be stored in your desk drawer, in your purse, or in your car.

Healthy Options

1. Grapes

Full of phytonutrients and antioxidants, grapes are a good choice when it comes to healthy snacks.

2. Bananas

Bananas are full of potassium and B vitamins. This is my favorite when it comes to morning snacks.

3. Nuts

According to the Mayo Clinic, nuts contain unsaturated fats and omega 3 fatty acids which are good for your heart. They also contain fiber which can help lower cholesterol. They are high in calories, so be sure to watch your serving size.

4. Peanut Butter

My all-time favorite snack! Peanut butter snack packs are great on the go. They are excellent for dipping. You can even keep them in your desk drawer at work for a quick snack or in your car for emergency snacks for the kiddos.

5. Apples

An apple a day keeps the doctor away is an old proverb that I’m sure we’ve all heard. Well, according to research, apples are extremely rich in important antioxidants, flavonoids, and dietary fiber. The phytonutrients and antioxidants in apples may help reduce the risk of developing cancer, hypertension, diabetes, and heart disease.

Spread a little peanut butter on your apple slices and sprinkle with chia seeds and you have an amazing mid-day snack.

6. Dark Chocolate

Packed with antioxidants and flavanols, DARK chocolate can be beneficial to you. If you love chocolate like I do, it’s probably easy to overindulge on this sweet treat. Keep it at two ounces MAX per day.

7. Greek Yogurt

I’m not going to lie, I’m not a huge fan of yogurt. But it is packed with nutrients like calcium, potassium, zinc and B vitamins. It’s also full of probiotics which is my main reason for eating it.

When you add fresh fruit, like raspberries or strawberries, it’s actually pretty delicious.

8. Sunflower Seeds

Sunflower seeds are rich in healthy fats, beneficial plant compounds, and several vitamins and minerals. They are especially rich in vitamin E and selenium.

9. Hard Boiled Egg

Eggs are good for snacks and even breakfast on the go. Eggs are packed with protein and potassium. I like mine sprinkled with just a tad bit of salt and pepper, please.

10. String Cheese

Who doesn’t love cheese? String cheese is great with crackers or it can be eaten by itself.

11. Veggies and Hummus

Hummus packs are great for dipping your vegetables. I like mine with carrots or celery sticks. Just pack your veggies in a Ziploc bag and toss your hummus pack in and you’ve got a delicious healthy snack.

12. Popcorn

Air popped corn is a great option if you crave potato chips. Popcorn is healthier than chips and full of fiber.

Stuffed Pepper Soup Recipe

Stuffed peppers are a favorite in my household.  My husband requests them quite often.   The recipe for this soup is actually very simple.  You’re simply taking all of the ingredients of a traditional stuffed pepper, and making it into a soup.  

And I have to say that this soup is so delicious. It makes for a very hearty and flavorful meal. It is also a very thick soup that has the consistency of a stew, so it is sure to fill you up.  I do believe that this will become a new favorite in our house.  I hope your family enjoys it as much as mine did.


1 – pound ground beef or ground turkey
1 – tablespoon olive oil
1 – cup chopped onion
1 1/2 – teaspoons minced garlic
½ – teaspoon garlic powder
1 – red bell pepper cut into ½ inch strips
1 – green bell pepper cut into ½ inch strips
1 – yellow bell pepper cut into ½ inch strips
1 – 15 ounce can tomato sauce
1 – 14.5 ounce can diced tomatoes
1 – 14.5 ounce can beef broth
2 – tablespoons Italian seasoning
Salt and Pepper to taste
¼ cup chopped parsley (optional)
2 cups cooked white or brown rice

Stuffed Pepper Soup Recipe


1. Heat olive oil in a large skillet over medium-high heat. Add the ground meat and cook until browned, breaking up into smaller pieces with a spatula. Season meat with salt and pepper.

2. Sautee onion and garlic in skillet for 2 or 3 minutes or until softened.

3. Transfer meat along with onion and garlic to a large pot.

4. Add the bell peppers to the pot of meat and cook for 2-3 minutes.

5. One by one add the tomato sauce, diced tomatoes, beef broth, Italian seasoning and garlic powder to the pot. Bring to a simmer.

6. Cook for about 15 to 20 minutes or until the peppers are tender.

7. Lastly, stir the cooked rice into the soup mixture. You can season it with a little bit of salt and pepper as desired. Top with parsley if desired and serve.


Homemade Chili Recipe

When the weather is cool outside, I always fix my family’s favorite – homemade chili. I mean, let’s face it, cool weather and chili go together like peanut butter and jelly.

A piping hot bowl of chili on a cool, crisp fall or winter day is always a hit. Serve it with grilled cheese sandwiches, peanut butter, and jelly sandwiches,  or a huge piece of cornbread.

The great thing about chili is that you can freeze it for later.   You can put your leftovers into a freezer friendly container a store for a week or two.  When you want a quick weeknight meal, just thaw, heat and serve.

Homemade Chili


1 pkg of Wick Fowler’s 2-Alarm Chili Seasoning Kit

2 lbs ground beef or ground turkey

1 – 8 oz can kidney beans

1 – 8 oz can pinto beans

1 – 16 oz can tomato sauce

1 – 15 oz can petite diced tomatoes

1 cup of water

1 cup of beef broth

1 large yellow onion chopped

1 bell pepper chopped

3 cloves garlic minced


Cooking Instructions:

1. Brown meat, onion and bell pepper in a large skillet or a saucepan. Once browned, toss in garlic and let cook for about two minutes.  Remove from heat and drain excess fat.

2. Empty the tomato sauce, diced tomatoes, beans, and water into a large pot and heat. 

3. Add cooked meat to your sauce.

4. Stir in all of the Wick Fowler packaged ingredients (except masa flour).

5. Cover skillet or saucepan and let simmer for about 30 minutes, or until meat is tender, stirring occasionally.

6. Mix masa flour into ¼ cup warm water and pour into chili. Let simmer another 10 to 15 minutes. You can skip this step if you prefer a thinner chili.

7. Remove pot from heat. Let chili rest 7 – 10 minutes.

8. Add desired toppings and serve.

Ready in about 60 minutes
Serves 8 people


If you like your chili a little spicier, you can add more red pepper.  If you prefer a milder chili, you can skip the red pepper altogether.
