How To Make Twice Baked Potatoes

Follow these instructions to prepare a side dish that’s not only delicious but also a showstopper at any dinner table.

Ingredients

4 Large Baking Potatoes
1 Cup Sour Cream
½ Cup Unsalted Butter
½ Cup Milk
1 Cup Shredded Cheddar Cheese
4 or 5 Strips Of Bacon, Cooked And Crumbled
½ Cup Chopped Green Onions
2 Tbsp Olive Oil
Salt And Pepper To Taste

Instructions

1. Begin by preheating your oven to 400°F. Wash and scrub the potatoes thoroughly to remove any dirt. Pat them dry with a paper towel.

2. Pierce each potato several times with a fork to allow steam to escape during baking.

3. Place potatoes on a baking sheet. Rub the potatoes with olive oil and sprinkle with salt. Place potatoes on a baking sheet. Bake for about 60 minutes, or until potatoes are tender when pierced with a fork.

4. Once the potatoes are baked, remove them from the oven and allow them to cool slightly before handling. Cut each potato in half lengthwise, and carefully scoop out the insides into a large mixing bowl, leaving a thin layer of potato on the skin.

5. Mash the scooped-out potato in the mixing bowl. Add sour cream, unsalted butter, and milk. Mix until the consistency is smooth and creamy. Season with salt and pepper to taste.

6. Fold in 1 cup of shredded cheddar cheese, crumbled bacon, and chopped green onions. Reserve a portion of the cheese, bacon, and green onions for topping.

7. Generously fill each potato skin with the potato mixture,  mounding it slightly. Top each potato with the remaining shredded cheddar cheese and crumbled bacon.

8. Place the potatoes back on the baking sheet and into the oven.  Bake at 375°F for an additional 20-25 minutes or until the cheese is melted and bubbly, and the tops are golden brown.

9. Remove from the oven and allow the Twice Baked Potatoes to cool for a few minutes before serving. Garnish with additional chopped green onions and sour cream if desired.
